Chicken Cacciatore

Ingredients

  • 2 1/2 to 3lbs chicken thighs or drumsticks

  • 1/4 cup shortening

  • 1/2 cup flour

  • 2 cups thinly sliced onion rings

  • 1/2 cup chopped green pepper

  • 2 cloves garlic, crushed

  • 1 can (1 lb) tomatoes, drained

  • 1 can (8oz) tomato sauce

  • 1 can (3 oz) sliced mushrooms

  • 1 tsp salt

  • 1/4 tsp oregano

Directions

  • Melt shortening in a large skillet.

  • Coat chicken with flour.

  • Cook chicken in shortening over medium heat for 15-20 minutes or until lightly brown.

  • Remove chicken and set aside.

  • Add onion rings, green pepper, and garlic to the skillet.

  • Cook and stir over medium heat until the onion and pepper are tender.

  • Stir in remaining ingredients.

  • Add chicken to the sauce.

  • Cover lightly and simmer 30-40 minutes or until the thickest pieces are fork-tender.
