Chicken Cacciatore
Ingredients
2 1/2 to 3lbs chicken thighs or drumsticks
1/4 cup shortening
1/2 cup flour
2 cups thinly sliced onion rings
1/2 cup chopped green pepper
2 cloves garlic, crushed
1 can (1 lb) tomatoes, drained
1 can (8oz) tomato sauce
1 can (3 oz) sliced mushrooms
1 tsp salt
1/4 tsp oregano
Directions
Melt shortening in a large skillet.
Coat chicken with flour.
Cook chicken in shortening over medium heat for 15-20 minutes or until lightly brown.
Remove chicken and set aside.
Add onion rings, green pepper, and garlic to the skillet.
Cook and stir over medium heat until the onion and pepper are tender.
Stir in remaining ingredients.
Add chicken to the sauce.
Cover lightly and simmer 30-40 minutes or until the thickest pieces are fork-tender.
