Mega Nachos

These loaded nachos are perfect for game day, family movie night, or when you need an easy dinner everyone will dive into. Layering the ingredients means every chip gets some of the good stuff!

INGREDIENTS

  • 1 large bag tortilla chips

  • 1 (16 oz) can refried beans

  • 1 lb ground beef

  • 1 packet taco seasoning (or your favorite homemade taco seasoning)

  • 2–3 cups shredded Mexican blend or cheddar cheese, divided

  • Pickled jalapeño slices, to taste

  • 3–4 green onions, thinly sliced

Optional Toppings:

  • Shredded lettuce

  • Salsa

  • Sour cream

  • Diced tomatoes

  • Sliced black olives

  • Diced avocado or guacamole

  • Fresh cilantro

DIRECTIONS

  1. Preheat your oven to 375°F.

  2. Brown the ground beef in a skillet. Drain any excess grease, then stir in the taco seasoning according to the package directions.

  3. Spread half of the tortilla chips evenly on a large sheet pan or oven-safe platter.

  4. Dollop the refried beans over the chips, then sprinkle with about half of the shredded cheese.

  5. Add the remaining tortilla chips to create a second layer.

  6. Evenly spoon the taco meat over the top, then cover with the remaining cheese.

  7. Scatter pickled jalapeños over everything.

  8. Bake for 10–15 minutes, or until the cheese is melted and bubbly.

  9. Remove from the oven and sprinkle with sliced green onions.

  10. Finish with your favorite toppings like shredded lettuce, salsa, sour cream, tomatoes, olives, avocado, or cilantro.

Anna’s Tip 💛

Don’t put the lettuce, salsa, or sour cream on until after the nachos come out of the oven. It keeps everything fresh and crisp while the cheese stays perfectly melty.

Serves: 6–8 as an appetizer or 4–6 as a main dish.
