Hot Honey Street Corn Bowls

INGREDIENTS

  • 2-3 large sweet potatoes, peeled and cubed

  • 1 lb ground beef

  • Packet taco seasoning

  • 2 cups frozen or canned corn

  • 1/2 cup cottage cheese

  • 1.5 Tbl mayo

  • 1/4 cup grated cotija cheese

  • 1 Tbl lime juice

  • 1 jalapeno

  • Cilantro

  • 2-3 Tbl Street Corn Seasoning

  • Avocado

  • Hot honey

DIRECTIONS

  1. Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil and spices. Roast for 20–25 minutes until tender and slightly caramelized.

  1. While potatoes roast, brown the ground beef in a skillet. Drain any excess fat. Add taco seasoning and a splash of water. Reduce heat and let simmer for 2-3 minutes.

  2. Char the corn (e.g., on a grill pan or directly over a flame). 

  3. Blend the cottage cheese until smooth. In a bowl, mix the charred corn with the street corn sauce ingredients and toppings.

  4. To build your bowls, layer the roasted sweet potatoes, seasoned ground beef, street corn mixture, sliced avocado, and pickled onions.

  5. Drizzle generously with hot honey
