Creamy Banana Pepper Bacon Chicken

INGREDIENTS

  • 5 slice bacon

  • 4 large chicken breasts

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 medium onion, thinly sliced

  • 1/2 cup sliced jarred banana peppers

  • 2 Tbl brine from pepper bar 

  • 1 cup heavy cream

  • Chopped parsley, optional 

DIRECTIONS

1. Cook bacon in a large skillet over medium heat until crisp, stirring often. Remove bacon from the skillet and set aside, leaving drippings in the pan.

2. Turn heat to medium-high. Season chicken evenly with salt, pepper and garlic powder and add them to the hot skillet. Cook, undisturbed until browned and easily releases from the pan, about 5 minutes.

3. Flip the chicken and cook, 2-3 more minutes. Remove chicken from skillet and set aside, keep warm.

4. Remove chicken from skillet and set aside, keep warm.

5. Add onion, banana peppers and brine to the skillet and cook, stirring constantly until onion softens.

6. Add in heavy cream and bring to a simmer.

7. Return chicken to skillet along with any juices that have accumulated. Reduce heat to medium-low and simmer until chicken is cooked through and mixture thickens slightly, about 5-7 minutes.

8. Garnish with chopped parsley, if desired.
