Serves: 6
Cook Time: 30 minutes

INGREDIENTS

  • 3 cups shredded cooked chicken
  • 1 bag frozen broccoli
  • 1 bag frozen riced cauliflower
  • 1 jar Rao’s Alfredo Sauce
  • 1 cup shredded cheddar cheese
  • 1 cup French fried onions, divided
  • Salt and pepper, to taste
  • Optional: ½ tsp garlic powder

INSTRUCTIONS

  1. Preheat oven to 375°F.
  2. Cook or microwave the frozen broccoli and riced cauliflower just enough to thaw. Drain very well so the casserole doesn’t get watery.
  3. In a large bowl, combine the shredded chicken, broccoli, cauliflower rice, Alfredo sauce, ¾ cup cheddar cheese, and ½ cup French fried onions.
  4. Season with salt, pepper, and garlic powder if using.
  5. Spread into a greased 9 x 13-inch baking dish.
  6. Sprinkle the remaining ¼ cup cheddar cheese over the top.
  7. Bake uncovered for 20 minutes.
  8. Sprinkle the remaining ½ cup French fried onions over the top and bake another 5–10 minutes, until hot and bubbly and the onions are golden and crispy.
  9. Let stand about 5 minutes before serving.

Anna’s Tip 💛

Adding the French fried onions toward the end keeps that topping nice and crunchy instead of getting too dark.
