
This easy, family-friendly casserole is packed with bold Mexican flavors, tender chicken, melty cheese, and topped with creamy queso. It’s perfect for busy weeknights or feeding a crowd!
INGREDIENTS

2 packages Knorr® Mexican Rice

1 (16 oz.) jar salsa

½ packet taco seasoning

3 cups chicken broth

3–4 cups cooked, shredded or diced chicken

2 cups shredded Mexican blend or cheddar cheese

1 container prepared queso dip (about 15 oz.)
DIRECTIONS

Preheat the oven to 350°F.

In a 9 x 13-inch baking dish, combine the Knorr Mexican Rice, salsa, taco seasoning, chicken broth, and cooked chicken. Stir well until everything is evenly mixed.

Sprinkle the shredded cheese evenly over the top.

Cover tightly with aluminum foil and bake for 50 minutes.

Remove the foil and switch the oven to broil. Broil for 2–4 minutes, or until the cheese is melted and lightly browned. Watch carefully so it doesn’t burn.

Remove from the oven and immediately pour the queso evenly over the top.

Let the casserole rest for about 5 minutes before serving.
Top with your favorite taco toppings like:

Crushed tortilla chips
Serve with a simple green salad or tortilla chips for a complete meal!
