
INGREDIENTS

4 strips bacon, sliced into 1″ pieces

1 small onion or shallot, diced

1 bag frozen tater tots

4 cups chicken broth

1 can corn, drained

2 cups whole milk

Shredded cheese, for garnish
DIRECTIONS

Cook bacon in your 8-qt. Stainless Steel Stock Pot until crispy, then remove and set aside.

Sauté the onion in the bacon drippings until fragrant — this is where all the flavor starts.

Dump in the whole bag of frozen tater tots, no thawing needed.

Add the chicken broth and drained corn, stir to combine.

Stir in the milk and let simmer 15-20 minutes, until the tots start to break down and thicken the soup.

Season to taste, garnish with the crispy bacon and shredded cheese.
